Christmas Brunch

Every year Scott's family makes Eggs Benedict Christmas morning, and it is a tradition I am happy to keep going. I had never eaten E.B. before being initiated into the Robertson Clan, but I've come to love it. It's funny because, even though we love it, we only make it at Christmastime.

For those of you, like myself, who have never had this delectable delicacy (ok, it's not really a delicacy, but it worked for alliterative purposes), it's really quite simple to make.

1) Toast an English muffin.
2) Put a pan fried piece of ham (not lunchmeat) on top o' the muffin.
3) Put a poached egg on top of that.
4) Smother it in a sauce made of fresh-squeezed lemon juice and mayo.Don't forget to warm it up. This is officially called 'Cheater Hollandaise Sauce' for those of you taking notes.
5) Enjoy.
