Dad's Mac & Cheese

Yesterday (Sept 23rd) was my Dad's birthday. He would have been 57 years old. (He passed away from lung cancer in March of 2008) In celebration, I made Kraft Deluxe Macaroni & Cheese--you know, the kind with the creamy cheese packet inside, rather than the powdered cheese packet. It was his favorite kind. And he always had to douse it with salt.
I remember it being a special treat to be able to have some of Dad's "special" macaroni & cheese. He would say, "If you make me some macaroni & cheese, you can have some of it after you get me a bowl." We always thought it was so awesome to have some of Dad's mac & cheese, and happily made it for him, knowing we would get some of it. Now that I'm a little older it makes me laugh. He just didn't want to make it himself, so he made us do it!! But it still feels special to me, and I have this strange fondness for Kraft Deluxe Macaroni & Cheese. It's a rich calorie, fat & sodium laden bowlful of goodness. A small thing, I know, but just one of those little things you cling to, I suppose.

Happy birthday, Dad. We'll see you in a little while!

  2. That has to be the cutest memory ever!! And that he had you guys make it so he didn't have to was great!!!! I am going to have to use that!!! lol
